Makes 4 servings
This is a simple, yet healthy and delicious meal that can be made in minutes. This is a go to meal of mine because of how quick it all comes together. It's perfect for the warmer months because it's a light, fresh dish.
1/4 cup chopped red onion
Juice of 2 small limes
2 tsp olive oil
1 pound cooked shrimp
2 avocados, roughly chopped
1 medium tomato chopped
1 tablespoon chopped fresh cilantro
2 tablespoons of freshly sliced scallions
Salt and pepper to taste
1. In a small bowl, combine the onion, lime juice, olive oil, salt, and pepper to taste.
2. In a separate bowl, combine the shrimp, avocado, tomato, cilantro, and scallions. Add the onion mixture and toss gently. Season with pepper, to taste.
3. Serve on a bed of lettuce or enjoy with chips!
