
Carrot Cake Balls
This is a treat the whole family will enjoy. These Carrot Cake Balls are a raw no-bake desserts made with healthy ingredients. Start to finish these treats take about 10 minutes!
Makes 16 balls
Ingredients:

1 cup dried, pitted dates
1 cup rolled oats
1/2 cups walnuts
1/2 cup carrots, finely grated
1 tablespoon flaxseeds
1 teaspoon vanilla extract
1/2 teaspoon cinnamon
1/4 teaspoon ground ginger
1/4 teaspoon allspice
1/2 cup coconut flakes
Directions:
1. Soak dates in 1 cup of warm water for about 5 minutes, then drain dates and save the water.
2. Add all of the ingredients (except the coconut) into a food processor and blend until a dough forms. Add 1 tablespoon of water in which you have soaked the dates if the mixture is too dry.
3. Scoop dough into 1 oz balls, and roll in coconut flakes.
4. Refrigerate for one hour.
