These Chicken Lettuce Wraps are one of my family's new favorite dinners. It is easy, fast and loaded with flavor. Have this meal on your table in less that 15 minutes!
Makes 4 servings
1 Tbsp olive oil
1 cup yellow onion, diced small
1 Tbsp sesame oil
1 lb ground chicken
2 cloves garlic, minced
1/3 cup Hoisin sauce
3 Tbsp soy sauce, low sodium
3/4 Tbsp rice vinegar
1 Tbsp Sriracha (optional)
1/2 tsp ground ginger
4 oz can water chestnuts drained, diced
1/4 cup copped peanuts
1 bunch scallions sliced
1/4 tsp red pepper flakes (optional)
salt and pepper to taste
butter leaves or iceberg lettuce for serving
Heat olive oil in a large sauté pan. Add in diced onion and cook until softened. This takes about 3-5 minutes.
Add in ground chicken, garlic and sesame oil. Cook until the chicken is no longer pink.
Combine hoisin sauce, soy sauce, rice vinegar, Sriracha, ginger, water chestnuts, green onions (reserving some for topping the lettuce wraps), peanuts and red pepper flakes.
Heat through. Taste and season with salt and pepper, as desired.
Fill lettuce wraps with chicken mixture garnish with extra scallions and serve. Enjoy!
