Chocolate Oat Bars

You will love this easy tasty gluten-free treat. These bars are ready in minutes and are loaded with fiber and protein! This is the perfect little afternoon snack to give you the fuel to finish up your day strong!


Makes 10-12 bars

Ready in 15 minutes


Ingredients

1/2 cup peanut butter

1/2 cup honey

1/4 cup butter

1 teaspoon vanilla extract

1/2 teaspoon cinnamon

1/4 tsp salt

2 cups quick oats 

1/2 cup dark chocolate chips

1/4 cup cocoa powder




Directions

  • Line an 8-inch square pan with parchment paper. Set aside.

  • In a microwave safe container, add peanut butter and butter. Microwave for 30 seconds, stir and then microwave for another 15-20 seconds, until peanut butter has thinned out.

  • Add in the honey, vanilla, salt, and cinnamon - stir until completely smooth. Now add in the quick oats and cocoa powder, and chocolate chips until evenly coated.

  • Pour mixture into the pan, and press down with an extra sheet of parchment paper. Really pack it in to make a flat even layer.

  • Freeze until firm enough to cut. Enjoy!


Recipe Notes:

Keep these in the refrigerator or freezer until you are ready to eat.


You can also make these into little balls and roll them in cocoa powder for a little extra sweetness.
