Couscous Bowls

When I am too tired to cook I usually make this recipe with whatever veggies I have in the fridge. This dinner can be on your plate in 20 minutes flat. The whole family can enjoy because they each can choose what goes into their bowl!





Serving size 1 bowl; Makes 2 bowls

Ingredients:

1/2 cucumber

1 4oz container of Greek yogurt, plain

1/2 large lemon, juiced

1 tablespoons of olive oil

1 tablespoon of chopped dill, fresh

salt and pepper to taste

1-2 teaspoons sugar (optional)

2 cups cooked couscous

3 cups mixed greens

1/2 cucumber 1 sliced

2 small tomatoes, sliced or chopped

1 bell pepper, sliced

2 hard boiled eggs

6 oz cooked chicken, sliced or chopped

Feta cheese (optional)

Directions:

1.) To make the dressing, first grate the cumber and put in a medium bowl. Next add the lemon juice, olive oil, dill, and salt and pepper. Mix together and set aside.

2.) To assemble to bowls evenly distribute couscous, mixed greens, cucumber, tomato, pepper, egg and chicken. Top with 1/2 of the Tzatziki dressing. Add cheese if desired.
