An easy recipe that can be used as a breakfast or snack. These bars are loaded with nutrient dense ingredients and are ready in under 20 minutes!
1 cup raw, shelled pistachios
1 cup rolled oats
1/2 teaspoon sea salt
1/4 cup honey
2 tablespoons of vegetable oil
1/4 cup coconut flakes
2 tablespoons dried cranberries
1 tablespoon raw, shelled pistachios

1.Preheat the oven to 350 degrees and line a bread pan (also called a loaf pan - around 8 x 4 in.) with parchment paper.
2.In a food processor, process the pistachios, oats, and salt for about 30 seconds, until a meal starts to form. Drizzle in the honey syrup and oil while the motor is still running and the meal begins to come together into a crumbly, almost-wet dough.
3.Press the dough evenly into a loaf pan and cover it with coconut flakes, dried cranberries and remaining pistachios.
4.Bake for 10 to 12 minutes until the coconut is nice and golden brown and the dough is cooked through. You want the squares to still be a little soft - don't over bake these.
