Roasted Kielbasa & Tomatoes Over a Creamy Feta Dip

THIS IS SO GOOD. That is all I can say! Yum. Seriously so simple! Perfect meal for a week night dinner with family or for entertaining a crowd.





Tomatoes:

1 package of turkey Kielbasa (13 oz), sliced

2 pints cherry tomatoes

1/3 cup olive oil

1 teaspoon of minced garlic

Salt & pepper to taste

1 teaspoon Italian Seasoning


Whip:

4 oz of crumbled feta cheese

1/4 cup cream cheese

1/4 cup olive oil

2 teaspoons fresh thyme leaves

1/2 teaspoon of Italian seasoning

Salt & pepper to taste

Up to 1/2 cup of water


Serve with bread to soak up all of the extra feta!


Directions:

Preheat your oven to 425 degrees. In an oven safe baking dish, add Kielbasa, tomatoes, olive oil, garlic, salt pepper and seasoning. Mix well. Bake in pre-heated oven for 15-20 minutes, or until the tomatoes start to brown and burst open.


In a food processor, add feta, olive oil, cream cheese, thyme, oregano, and salt and pepper. Blend until completely smooth. At this point, give it a taste to see if it needs more seasoning. Slowly stream in water and blend until you have a nice smooth and creamy texture. You may not need the whole amount of water. Add it slowly.


In a large bowl, spread the whip out along the bottom. Top with roasted tomatoes, Kielbasa and any extra oil in the dish. Serve with bread. Enjoy!

  • cheese: you can completely omit the whip from this recipe and enjoy the roasted tomatoes or you can use your favorite dairy free feta and cream cheese in this recipe
