
Strawberry Cheesecake Mousse

Dessert in 15 minutes! You will enjoy this light, fluffy sweet treat. Top with chocolate chips or sprinkles!

Yields: 6 servings
Ingredients
Crust:
3/4 cup graham cracker crumbs
2 tablespoons sugar
3 tablespoons salted butter, melted
Mousse:
1 ¾ cup fresh strawberries
1 ½ cup heavy whipping cream
¼ cup powdered sugar, sifted
1 teaspoons vanilla extract
4 ounces light cream cheese, softened
4 ounces vanilla or strawberry Greek yogurt
Instructions
In a medium mixing bowl, stir together graham cracker crumbs and sugar. Pour in butter then using a fork, stir until evenly moistened. Divide mixture among 6 dessert cups and lightly press into an even layer.
In a food processor, pulse strawberries until almost pureed and small chunks remain.
Whip the cream until medium peaks form, then add sugar and vanilla.
In a separate bowl, mix cream cheese and yogurt. In small batches, add the whipped cream to the cream cheese mixture by folding gently. Continue adding all of the whipped cream to the cream cheese mixture. Avoid over mixing.
Gently fold in the strawberries
Pour mousse mixture on top of the crust. Place in the refrigerator for 1-2 hours to firm. Garnish with fresh strawberries.

The fat and saturated fat appear rather high in this recipe, but for a slice of cheesecake it's usually double this!
