Sun-Dried Tomato & Goat Cheese Flatbread


Switch up your usual pizza night with the super fast, healthier version of a traditional pizza. The best part is you can make it faster than you can get a pizza delivered - on the table in 20 minutes. You can add any additional ingredients you want to make everyone in the family happy!



Makes 6 servings


Ingredients:

1 sheet of store bought puff pastry, (thawed in the refrigerator overnight)

1 egg

1 tablespoon olive oil

1/3 cup thinly sliced red onion

1/3 cup sun dried tomatoes, chopped

1/3 cup freshly grated Parmesan cheese

1 tablespoon fresh oregano, torn apart by hand

1/4 teaspoon garlic powder

1/2 teaspoon Italian seasoning

Salt and pepper to taste

2-4 oz of crumbled goat cheese

8 oz of a good tomato sauce for dipping - optional


Directions

  • Preheat the oven to 425 or follow the puff pasty's recommendations on the box.

  • In a medium sauté pan, heat oil then add onions. Cook on medium-low for about 3 minutes. Let cool for about 2-3 minutes

  • In a bowl, whisk the egg - add in cooked onion, sun dried tomatoes, oregano, garlic powder, Italian seasoning, salt and pepper.

  • Line a sheet pan with parchment paper. Unroll the puff pastry, and make several pricks on the pastry to prevent air bubbles. Leave a one inch parameter for a crust. Top with egg and sun-dried tomato mixture. Sprinkle goat cheese over top.

  • Cook for 12-15 minutes, or until puff pastry edges have browned.

  • Slice into 8 slices. Serve warm with tomato sauce for dipping.
